Shrimp Scampi with Butter Sauce




1 lb large fresh shrimp
3 large garlic cloves, finely chopped
2 tablespoons olive oil
3-4 tablespoons butter
¼ teaspoon crushed dried red pepper (optional)
1-2 tablespoons chopped fresh or dried parsley
black pepper
Salt to taste

Peel and devein the shrimp. In a large skillet, fry chopped garlic in hot olive oil for 1 to 2 minutes. Add the butter and stir until it melts. Add the shrimp and add 2 minutes. Stir with salt and red pepper. Reduce heat to simmer and leave for 4-5 minutes or until the shrimp turns pink.
Sprinkle with fresh parsley and serve over your choice of rice or noodles hot.
